Influence of the storage mode on qualitative changes in carrots (Daucus carota L.).

Incidence du mode de conservation sur l'évolution qualitative de la carotte (Daucus carota L.).

Summary

The changes in various parameters were studied in the field and in cold stores (conventional refrigeration and humid cold). Humid cold, unlike field storage, can maintain the biochemical quality of produce for about six months. On the other hand, it results in a superficial desquamation which lowers the value of produce drastically and makes them unsuitable for marketing under the label "extra". As far as pathogens are concerned, results are more varied and depend mainly on the soil and on the climatic conditions prevailing the month before storage in cold rooms.
