Summary

The importance of environmental and economic factors when building refrigerating companies is highlighted. It is noted that vegetable raw material losses can be lessened by using a technology of fruit and vegetable processing developed by the Institute of Low Temperature and Energy Technology of Odessa. This technology includes vacuum drying, and vegetable and fruit freeze-drying. The drying process takes place in a plant operated continuously, with rotary freeze-drying cylinders. C.C.
