Summary

A COMPARATIVE STUDY ON THE INDUSTRIAL SCALE, OF HEAD CABBAGES STORED IN AIR OR IN CA (3% O2, 5% CO2 ) SHOWED THAT SOLUBLE SUGARS AND CHLOROPHYLLS ARE PRESERVED BY CA. AN INCREASE IN THE RESPIRATORY RATE WAS OBSERVED AT THE BEGINNING OF STORAGE. THE METHODOLOGY FOR MEASURING RESPIRATORY ACTIVITY IS DISCUSSED, AS ITS EXPRESSION IN TERMS OF CABBAGE WEIGHT MAY BE ERRONEOUS.
