Summary

Changes in the content of glycogen, derived compounds of ATP, glycolytic metabolites, free aminoacids, polyamines and basic volatile nitrogen during storage at 5, 0 and -1 deg C. Results show that hypoxanthine, ornithine and volatile nitrogen are valuable indexes of crab freshness.
