Summary

The article discusses the behaviour of raspberries, from harvest to consumption. The fruit physiology is studied, since it is necessary to improve its storage ability. Modified-atmosphere storage reduces rots and increases storage life. Preharvest treatments (pyrrolnitrine) and those during storage (sulphur dioxide), aimed at preventing deterioration due to Botrytis cinerea, are discussed.
