Anaerobic respiration rate of Golden Delicious apples controlled by environmental PCO2 (partial pressure of CO2).

Summary

As a function of the adopted working conditions (temperature and gas composition of surrounding atmosphere), an unwished fermentative process may occur in cells of fruits stored in refrigerated and controlled atmosphere. To individuate a mathematical equation able to describe the kinetic effect of PCO2 on anaerobic respiration, the CO2 produced by Golden Delicious apples was measured at PO2 close to zero and at increasing values of PCO2. These experimental data allowed to quantify the kinetic effect of PCO2 on fermentation which was also compared with that induced on aerobic respiration.
