Summary

Predictive food microbiology is based upon the premise that the response of the populations of microorganisms to environmental factors is reproducible. Based upon data from model experiments, it is possible to predict microorganism behaviour in different environments or products. The aim of such modelling is to predict and evaluate food safety or shelf life. Experiments and mathematical modelling incorporate such growth factors as temperature, pH, water activity and sodium chloride content. Corresponding models and equations are presented in the paper.
