Summary

In a detailed report, the author presents the objectives and main characteristics, concepts and tools of predictive microbiology, which is a growing science contributing to the evaluation of microbiological safety and shelf life of foodstuffs. It shortens the development time of products and controls quality. The author underlines the causes of contamination and degradation mechanisms, more particularly in meat products. He explains how to model mathematically the behaviour of microorganisms submitted to various treatments (probability and kinetic models), how data are obtained and how models can be improved and validated.
