Summary

A computer method to simulate quality loss during storage of frozen foods is presented. The emphasis of the paper is on simulating a single quality factor. The influence of several variations in the storage temperature on product quality are examined. Food products that show reversed stability, i.e. an increase in reaction rate with decreasing storage temperatures, emphasize the importance of selecting correct conditions in order to extend periods of storage.
