Summary

Results of desiccation tests on different food products prefrozen (or not) are given. Three different groups are considered; 1) potato, onion, pear, apple, fish and meat; 2) carrot, beetroot, pumpkin, melon; 3) dairy products, curd, mixture. Different methods are recommended for the various groups, with or without prefreezing. These give, depending on the particular case, a reduction in drying time and the maintenance or improvement in the quality of the dried product. C.C.
