A PILOT PLANT, FITTED WITH A UNIT FOR SEPARATING THE JUICE FROM THE PULP OF HALF-KIWIS, IS DESCRIBED. YIELDS AS WELL AS PHYSICO-CHEMICAL AND MICROBIOLOGICAL CHARACTERISTICS OF EACH PRODUCT ARE MEASURED. STABILITY TESTS ARE CARRIED OUT ON DEEP FROZEN JUICE, ON THAWED JUICE WHICH IS CHILLED AND ON NECTAR WHICH IS PREPARED BY THE ADDITION OF SACCHAROSE SYRUP TO FRESH JUICE, AND THEN STORED IN CHILLED VENDING MACHINES.
