Summary

Bunches of grapes harvested early October were placed in paper baskets either immediately or following packaging in plastic or paper bags. The grapes were then stored at -1 to 0 deg C under 95% relative humidity conditions and were treated in various manners using SO2. Following treatment, the storage area was defumigated using steam. The weight, acidity, pH, dry extract and SO2 content of the grapes were monitored.
