THE AUSTRALIAN MEAT INDUSTRY EXPORTS ABOUT 600,000 TONNES/YEAR OF BONELESS BEEF IN FIBRE-BOARD CARTONS CONTAINING 27 KG OF FROZEN MEAT PIECES. MOST OF THE CARTONS ARE FROZEN IN AUTOMATIC AIR BLAST FREEZERS, BUT A FEW WORKS USE PLATE FREEZERS WHICH ARE GENERALLY RECOGNISED AS OFFERING SEVERAL ADVANTAGES OVER AIR BLAST FREEZERS. PROGRESS WITH A PROTOTYPE AUTOMATIC PLATE FREEZER IS DESCRIBED. ECONOMICS IN MEAT PRODUCTION ARE EXPECTED FROM THE ADOPTION OF NEW TECHNIQUES WHICH INCLUDE ELECTRICAL STIMULATION, CARCASS DECONTAMINATION, HOT BONING AND AUTOMATIC PLATE FREEZING. AN ADDITIONAL RESEARCH AND DEVELOPMENT PROGRAM INTO ALTERNATIVE PACKAGING AND LABELLING TECHNIQUES OF FROZEN MEAT IS ENVISAGED.
