Summary

The objectives of this work were: the study of the effects of culture temperature and agitation, and of iron and ascorbic acid, on growth and extracellular proteinase and lipase production by a Pseudomonas fluorescens strains; the application of a sub-pasteurization temperature treatment in order to minimize proteolysis and lipolysis of ewe's milk during storage of 7 or 2 deg C. The treatment proved to be efficient.
