Summary

Results are given of time-temperature surveys of frozen peas in the freezer chain in Denmark together with an estimation of the loss in shelf life of peas in the chain. Display cabinets and results from various operating criteria are tabulated and discussed. The use of night covers and modified defrost schedules are recommended. G.R.S.
