Summary

EXPERIMENTS WERE CONDUCTED TO INVESTIGATE THE EFFECT OF FLEXIBLE LAMINATE POUCH PACKAGING (POLYESTER/POLYETHYLENE) ON THE QUALITY CHARACTERISTICS OF EGGS PICKLED IN THREE DIFFERENT SOLUTIONS AND STORED AT 275 OR 298 K (2 OR 25 DEG C). BETTER OVERALL ACCEPTABILITY SCORES WERE OBSERVED FOR EGGS PACKAGED IN FLEXIBLE POUCHES. LONG TERM STORAGE AT 275 K PREVENTED YOLK SWELLING AND SPLITTING OF THE EGG WHITE. POLYESTER/POLYETHYLENE LAMINATE POUCHES COULD BE UTILIZED MORE CONVENIENTLY AND ECONOMICALLY THAN THE CONVENTIONAL GLASS JARS WITHOUT ANY ADVERSE EFFECT ON THE PRODUCT QUALITY.
