RECIRCULATED WATER CHILLING FOR EVISCERATED POULTRY.

Author(s) : HALL D. L.

Summary

USING RECIRCULATED CHILLED WATER INSTEAD OF ICE TO COOL POULTRY CARCASSES IS GIVEN PREFERENCE BECAUSE THERE IS BETTER TEMPERATURE CONTROL, CARCASS TEMPERATURES ARE LOWER, THE CIRCULATING WATER PRODUCES CLEANER PRODUCTS AND ENERGY COSTS ARE LOWER. THE ARTICLE ILLUSTRATES HOW SUBSTANTIAL ENERGY SAVINGS CAN BE ACHIEVED BY USING THE CHILLEDWATER SYSTEM. AN EXAMPLE DETERMINES THE COSTS OF OPERATING A PLANT HANDLING 8,400 BIRDS PER HOUR, THE PLANT RUNNING FOR 16 HOURS PER DAY AND 250 DAYS PER YEAR. THE AVERAGE WEIGHT OF EACH BIRD IS 1.5 KILOGRAMME, THE CARCASS BEING PRECOOLED FROM 296 K (24 DEG C) TO 274.6 K (1.6 DEG C) BEFORE BEING TRANSFERRED TO THE WATER CHILLER. CALCULATED EXAMPLES ARE GIVEN FOR COOLING LOADS AND COST SAVINGS. A. H. S.
