THE AUTHORS PROPOSE METHODS, PROVED IN RUSSIA BY GOSSTANDART, FOR THE CALCULATION OF SPECIFIC HEAT, ENTHALPY, WATER SEPARATED BY FREEZING AND DENSITY, AS WELL AS A METHOD FOR CALCULATING THE THERMAL CONDUCTIVITY OF FOODSTUFFS. AN EXAMPLE IS GIVEN OF THE CALCULATION OF THESE PROPERTIES IN BEEF BONE,IN THE TEMPERATURE RANGE 213-313 K, TAKING INTO ACCOUNT WATER CONTENT, FAT, PROTEINS, BONE ASHES AND POROSITY. THE FUNCTION OF SPECIFIC HEAT, DENSITY AND THERMAL CONDUCTIVITY ARE GIVEN.
