Summary

AN EVALUATION OF ALL FACTORS DETERMINING THE EFFICIENCY OF CHAMBERS WAS MADE ON THE BASIS OF MATHEMATICAL MODELLING THE COLD TREATMENT PROCESSES. AN ALGORITHM FOR PROJECTING THE TECHNOLOGICAL PROCESSES OF CHILLING AND FREEZING MEAT IN A CONTINUOUS LINE WAS DEVELOPED AND A TASK OF COLD TREATMENT OF MEAT IN A CONTINUOUS LINE WITH THE VARIABLE PARAMETERS OF A MEDIUM WAS SOLVED.
