THE AVERAGE QUANTITY OF FRUITS, VEGETABLES AND CUT FLOWERS (EXCLUDING CITRUS) EXPORTED DURING THE LAST 3 YEARS FROM ISRAEL WAS 150,000 TONNES PER YEAR. ONE THIRD OF THIS QUANTITY IS AIR-FREIGHTED AND TWO THIRDS ARE SHIPPED IN REEFER SHIPS. EIGHTY PERCENT OF THE COMMODITIES ARE PRECOOLED AND HELD AT LOW TEMPERATURES. PRECOOLING CLOSE TO THE PICKING TIME, AND KEEPING OF A REASONABLE REFRIGERATION CHAIN ENCOUNTER SERIOUS PROBLEMS. RESEARCH WAS GEARED TO SOLVE MAJOR PARTICULAR PROBLEMS AND ADAPT SUITABLE COOLING PRACTICES IN ORDER TO ACHIEVE A HIGH GRADE PRODUCE WITH VERY SMALL LOSSES FROM THE FARMER TO THE CONSUMER. THIS PAPER DESCRIBES SEVERAL SOLUTIONS IN FAST COOLING OF STRAWBERRIES, CANTALOUPES, LEAFY VEGETABLES AND THE MAINTENANCE OF THE ACHIEVED TEMPERATURES INLAND AND DURING SEA AND AIR TRANSPORT.
