Summary

The Revue Générale du Froid (a French refrigeration journal) visited two wineries in two different regions, making two very different wines, and with two different legal structures. They had one thing in common: the use of artificial refrigeration for the optimization of alcoholic fermentation and for the air conditioning of wine storage areas.
