Summary
Prediction of freezing time is investigated for a combined air blast/plate freezer used for freezing of fish in China. Surface heat transfer coefficients were measured from experiments freezing pure water. The enthalpy formulation of the finite difference method was used for making predictions which are shown to agree with experimental measurements within a small tolerance. Predictions across a range of conditions likely to occur in practice are presented.
