Summary

SALMONELLAE WERE INVESTIGATED IN 304 SAMPLES OF FROZEN FROGLEGS ; 121 SAMPLES (39.8%) WERE FOUND POSITIVE. THE CONTAMINATION RATIO WAS DIFFERENT DEPENDING ON THE ORIGIN: 25.4% FROM INDIA AND 51.5% FROM INDONESIA. THE IMPROVEMENT OF THE SANITARY CONDITIONS OF PROCESSING IN INDIA ARE STRESSED. FROG LEGS ARE STILL A SIGNIFICANT SOURCE OF SALMONELLAE IN FRANCE ; ALTHOUGH THEY ARE NOT DIRECTLY RESPONSIBLE OF FOOD TOXI-INFECTIONS BECAUSE THEY ARE CONSUMED WELL COOKED, THEY ARE A SOURCE OF PROPAGATION.
