Summary

THE TEST INOCULATION OF TWO STRAINS OF SALMONELLA (S. TYPHIMURIUM AND S. PARATYPHI B) WAS MADE IN SELECTED SAMPLES OF FROZEN GROUND BEEF. FOUR STORAGE TEMPERATURES WERE USED, 298, 283, 279, 273-275 K (25, 10, 6, 0-2 DEG C). THE RESULTS WERE DISCUSSED AS FOLLOWS: 1. BACTERIAL GROWTH, COMPOSITION OF FLORA AND RESPECTIVE PERCENTAGES ; 2. SALMONELLA COUNTS ; 3. SEARCH FOR SALMONELLA IN 10 G, 1 G AND 0.1 G.
