Summary

The safety of foods should be ensured by the application of good manufacturing practices and the HACCP principles and not by testing of products. However, it may be necessary to examine foods for the presence of pathogens. In the case of Listeria monocytogenes, the number present must be taken into account, because for individuals who are not particularly susceptible, the presence of a few (less than 100/g) does not pose an unacceptable risk. This is demonstrated using exposure and response figures from Germany. The determination of the need for examination and the choice of sampling plan, as discussed in the paper, follows the recommendations.
