Summary

Sensory evaluation consists of a collection of techniques and practices aimed at systematically measuring and interpreting human perceptions. It involves metrology, psychology, biology and statistics. This study therefore takes a multidisciplinary approach to review sensory, hedonic and instrumental measurements of perceptions. Each chapter provides an update on a theme, with concrete examples.
