Summary

The microbiological situation of minced bovine meat and hamburgers packaged in modified atmosphere and stored at 2 °C was evaluated. The aim of the work was the shelf life determination. According to the obtained results, the two different products have a medium shelf life of 5-6 days if refrigeration temperatures are respected.
