Summary

According to the results of the study, the sensitivity of a colour indicator used in packages containing minced meat steaks should be adjusted so that leaks bigger than 69 micrometers in diameter on the sealing area the width of which is 3000 micrometers could be detected. This would mean a commercial acceptability time for steaks of nearly 5 weeks when stored at 5 deg C and at least 2 weeks if stored at 10 deg C.
