Summary
A code employing boundary-fitted grids was implemented in a numerically conservative form (control volume formulation). The proposed model was satisfactorily checked against experimental data obtained with minced meat and tylose. The accuracy of the boundary-fitted grids method is similar to one obtained by finite elements but shorter computer times and simpler codes were employed.
