SLOW COOLING OF BARLINKA AND QUEEN OF THE VINEYARD GRAPES FROM 21 TO -0.5.C OVER A PERIOD OF 14 DAYS HAD NO EFFECT ON THE DEVELOPMENT OF DECAY. BERRY CRACKING IN QUEEN OF THE VINEYARD INCREASED IF THE COOLING PERIOD WAS LONGER THAN SEVEN DAYS. COOLING TO 7 deg C WITHIN 48 HOURS, FOLLOWED BY SLOW COOLING OVER 14 DAYS DID NOT AFFECT DECAY OR BERRY CRACKING. COOLING TO 7 deg C IMMEDIATELY AFTER HARVEST FOLLOWED BY SLOW COOLING ON BOARD SHIP WILL REDUCE PRESSURE ON THE PRECOOLING FACILITIES WITHOUT DETRIMENTALLY AFFECTING QUALITY. SUCH A SYSTEM FOR HANDLING WILL ONLY BE EFFECTIVE IF THE COLD CHAIN IS MAINTAINED AFTER PRE-COOLING IN THE PRODUCTION AREA.
