Summary

The biological aspects of the short-term storage of fresh fruit and vegetables in refrigerated display shelves and in small cold rooms in shops are discussed. The effects of temperature on post-harvest physiology and on the cold-diseases of fruit and vegetables are summarized and discussed, along with the inhibitory effect of low temperature on microbial infections. The effects of relative humidity in small shop installations on weight loss in fresh fruit and vegetables are discussed; possible ways of reducing weight loss are suggested. The main bio-technical parameters of the short-term storage of fruit and vegetables in small shops are tabulated. A short discussion about the problems arising in short-term storage of frozen fruit and vegetables in small shops is reported. A. P.
