THE DECREE OF FEBRUARY 10, 1984 RELATES TO COLLECTING, STORAGE, TREATMENT, TRANSPORT AND SANITARY INSPECTION CONDITIONS FOR ANIMAL BLOOD IN SLAUGHTER-HOUSES. ESPECIALLY, THIS BLOOD SHOULD BE COLLECTED IN A REFRIGERATED TANK, BRINGING ITS TEMPERATURE AS QUICKLY AS POSSIBLE TO 276 K (3 DEG C), UNLESS AN ALLOWED STORAGE TECHNIQUE IS USED ; IT IS THE SAME FOR MAINTAINING IT FROM COLLECTION TO MARKETING, AT A TEMPERATURE NOT HIGHER THAN 276 K. THE DECREE SPECIFIES THE FREEZING OF BLOOD OR ITS CONSTITUENTS TO A TEMPERATURE NOT HIGHER THAN 255 K (-18 DEG C), HENCE THEIR SOLIDIFICATION AS BLOCKS OR FLAKES (ANNEX I). THE MICROBIOLOGICAL CRITERIA THAT SHOULD BE MET BY BLOOD TO BE USED IN FOOD PRODUCTS, ON COLLECTION OR AFTER HANDLING, ARE GIVEN IN THE ANNEX II OF THE DECREE. G.G.
