VERY GOOD CORRELATION WAS FOUND BETWEEN FLAVOR SCORE AND AMMONIA CONTENT, TRIMETHYLAMINE, TOTAL VOLATILE BASE, HYPOXANTHINE, PH AND AEROBIC PLATE COUNT. NONE OF THESE METHODS COULD DIFFERENTIATE 2 DAY POSTMORTEM SQUID FROM 5 DAY SAMPLES.
