FROZEN STORAGE BEHAVIOUR OF SQUID (LOLIGO VULGARIS).

Summary

FIVE LOTS WERE MADE (WHOLE ; GUTTED ; MANTLE ; TREATED BY IMMERSION IN A METABISULFITE SOLUTION ; MINCED FINS AND TENTACLES), AND WERE KEPT AT 253 K (-20 DEG C) OVER 408 DAYS. THE SMALL DETERIORATION OF MYOFIBRILLAR PROTEIN PROBABLY DETERMINED THE KEEPING OF TEXTURE. ORGANOLEPTICALLY, NO RANCIDITY INDEX WAS DETECTED. NO OCCURRENCE OF MELANOSIS WAS OBSERVED DURING FREEZING AND THAWING, BUT IF THE PRODUCT IS KEPT, AFTER THAWING, COOLED FOR THREE DAYS, MELANOSIS OCCURRED IN ALL SQUID LOTS WHICH WERE NOT SKINNED, EVEN IN THE LOT TREATED BY METABISULFITE. THE STORAGE LIFE OF MINCED SQUID, WITHOUT ADDITIVES, IS SIMILARTO THAT OF WHOLE SQUID.
