THE TECHNOLOGY OF HANDLING, FREEZING AND THAWING OF CANADIAN ATLANTIC SQUID AND THE RELATED OPERATIONS SUCH AS CATCHING, FREEZING, THAWING AND SKINNING HAVE BEEN INVESTIGATED. THE LIMITATIONS AND ADVANTAGES OF THOSE OPERATIONS HAVE BEEN OUTLINED AND COMPARED. AN OBJECTIVE METHOD FOR EVALUATING THE QUALITY OF FRESH AND FROZEN SQUID HAS BEEN DEVELOPED AND HAS BEEN SATISFACTORILY APPLIED TO VARIOUS SQUID PRODUCTS.
