Storage life of frozen beef.

Summary

Fillet, topside and rump from young bulls ("intervention beef") was frozen and stored at -12 or -24 deg C for up to three years. Large cuts, vacuum packed or wrapped in polyethylene pouches, were at different times cut into steaks which were vacuum packed and placed at -12 or -24 deg C. The quality of the beef was evaluated using the laboratory panel and the laboratory home panel. Average storage life is about 2 to 3 years. Detailed results are given.
