Summary

This short article presents the basic principles of time-temperature-tolerance relationships for frozen foods. HQL (High Quality Life) is described - this constitutes the duration at a certain storage temperature during which a foodstuff's qualities are largely unaffected; PSL (Practical Storage Life) - this constitutes the time interval during which a stored frozen foodstuff is of a sufficiently high quality for an informed consumer; and the acceptability factor. These are empirical notions but data provided by surveys can lead to the establishing of useful evaluations of the quality of stored frozen foods.
