A DETAILED COMMENTED TABLE GIVES FOR 17 APPLE VARIETIES OF SOUTH-EASTERN FRANCE, THE OPTIMUM STORAGE CONDITIONS, WITH THE DATE OF EARLY HARVESTING, TEMPERATURES [BETWEEN 273 AND 277 K (0 AND 4 DEG C)], THEIR STORAGE LIFE, THE POSSIBLE DETERIORATIONS OF THESE FRUIT, WITH OBSERVATIONS ON HARVESTING INTERVALS AND THE STAGGERING OF THEIR RIPENING. USEFUL ADVICE IS GIVEN FOR PREVENTING THE FOLLOWING DISORDERS: SCALD, BITTER PIT, VITREOUS CORE AND INTERNAL BREAKDOWN. THE RELATIVE HUMIDITY OF COLD ROOMS SHOULD RANGE, ON AN AVERAGE, AROUND 90%, IN ORDER TO CONTROL MASS LOSS. THE RATE OF AIR CIRCULATION SHOULD BE 40 ON THE ADMISSION OF FRUIT AND 20 DURING STORAGE.
