THE INTRODUCTION NOTES A BROAD DIVISION OF BEHAVIOUR BETWEEN FRUIT WHICH EXHIBIT A SUDDEN RISE IN THEIR RATE OF RESPIRATION WHEN RIPENING COMMENCES AND OTHER FRUIT, AND VEGETABLES, WHICH RESPIRE AT A STEADY RATE AT THE SAME TEMPERATURE OF STORAGE. THE INFLUENCE OF LEVELS OF TEMPERATURE, HUMIDITY AND COMPOSITION OF THE STORAGE ATMOSPHERE ON FRUITS IN STORAGE IS DISCUSSED. DETERIORATION OF FRUIT AND VEGETABLES IN STORE MAY BE PHYSICAL, PHYSIOLOGICAL, CHEMICAL, PATHOLOGICAL. THE REVIEW SUGGESTS THAT MUCH OF THE WASTAGE AND LOSS THAT OCCURS IN FRUIT AND VEGETABLE CONSIGNMENTS COULD BE PREVENTED BY THE CORRECT APPLICATION OF THE EXISTING KNOWLEDGE IN THE PRESENT LITERATURE.
