Summary

THE MICROBIOLOGICAL QUALITY OF A CAULIFLOWER AT HARVEST TIME IS EXCELLENT IF THE TOTAL FLORA IS CLOSE TO 10,000 CFU/GRAM THE LIMIT IS FIXED AT 1 MILLION CFU/GRAMME. THE MAIN CAUSES OF DETERIORATION AT HARVEST TIME ARE THE DEVELOPMENT OF A FUNGUS, ALTERNARIA, OR THE PROLIFERATION OF BACTERIA RESPONSIBLE FOR PECTINOLYTIC DETERIORATION SUCH AS CERTAIN BACILLUS, MAINLY PSEUDOMONAS FLUORESCENS. HOWEVER PRECOOLING WITH HUMID COLD AIR IS A PROCESS WHICH COMBINES HUMIDITY, FAVOURABLE FOR ALTERNARIA, AND LOW TEMPERATURE WHICH, ALTHOUGH IT REDUCES THE OVERALL BACTERIAL GROWTH, CAN FAVOUR PECTINOLYTIC SPECIES SUCH AS CERTAIN PSEUDOMONAS FLUORESCENS. THE AUTHOR STUDIED CHANGES IN THE MICROBIOLOGICAL QUALITY OF CAULIFLOWERS WHICH WERE PRECOOLED WITH HUMID COLD AIR.
