Storage of frozen foods: effect of operation conditions of the cold store on food quality and energy costs.

Summary

A stack of boxes with several types of frozen foods was arranged. It was submitted to different types of thermal histories in the cold store. The thermal response of the foods was registered as well as the variation of certain quality factors along the storage. Both the thermal response of the stack and the quality loss of the stored foods were related to the thermal history of the air in the chamber. In other series of experiments, the electrical power consumption (energy costs) and the thermal response of the stack were determined for different operation policies as: normal control by thermostat, operation only in valley hours, etc.
