Summary

Apple fruits (cv. Fuji) were stored for 40 days in controlled atmosphere (CA) storage (1 kPa O2 + 0.2 kPa CO2) at 91 or 96% RH at 2.5 °C and then transferred to CA storage at 0.5 °C and 96% RH. Control fruits were stored in CA storage at 0.5 °C and 96% RH. Following storage, fruits were held in simulated shelf life conditions (ambient temperature) for 7 days. Oxygen pull down was carried out on the first or fourth day after CA chamber closing. After eight months, quality was evaluated through flesh firmness, titratable acidity, total soluble solids, decay and breakdown.
