Storage of witloof chicory: impact of precooling. Merits and limits of selectively permeable wrappings.

La conservation des chicons : préréfrigération et emballages à perméabilité sélective.

Type of article: Article

Summary

The storage quality of Belgian endive heads has become one of the major criteria of product marketability. Following harvest, witloof chicory heads undergo various types of deterioration: drying, turning red, turning green, bacterial diseases etc. However, all these problems can be controlled by adapting the production, packaging, storage and distribution techniques. Some types of wrapping help limit this deterioration, but their effectiveness remains dependent on the initial quality of the witloof chicory and the conditions in which it was grown.
