Summary

THE MAIN OBJECTIVE PARAMETERS RELATED TO THE RIPENING INDEXES OF THE CULTIVAR GOLDEN DELICIOUS AND GRANNY SMITH WERE MEASURED DURING COLD STORAGE. THREE TECHNIQUES WERE USED TO COLLECT THE DATA: NORMAL REFRIGERATION, POLYETHYLENE BAG, AND CONTROLLED ATMOSPHERE. FIRMNESS, TOTAL ACIDITY AND TSS/ACIDITYWERE FOUND TO BE RELIABLE INDICATORS AND RELATIVELY EASY TO CALCULATE. STARCH CONTENT AND TSS HOWEVER, WERE FOUND TO BE AN UNRELIABLE PARAMETER. IN TERMS OF STORAGE TECHNIQUES, THE CA METHOD CAUSED A CONSIDERABLE SLOW-DOWN IN RIPENING WHICH WAS SHOWN CLEARLY BY THE GREATER FIRMNESS AND HIGHER ACIDITY COUNT FOUND IN THE FRUIT. A. P.
