Study of the heat transfer of liquid foods using a plate exchanger.
Author(s) : TADINI C. C., BADOLATO G. G., VIEIRA B. M. N. L., et al.
Summary
The main objective of the study was to determine the flow characteristics of a plate heat exchanger and use their parameters to design the pasteurization processes of liquid foods. The aim of the study was also to achieve suitable heat transfer correlation model to predict the liquid food heat transfer coefficient for varied operating conditions.
