Summary

FROZEN PEACHES CAN BE USED IN THE INDUSTRY FOR PRODUCTION OF CANNED FRUIT. SOME PROBLEMS GIVEN BY THE PHYSICAL CHARACTERISTICS OF THESE FRUIT WERE RESOLVED. FROZEN PEACHES MUST BE HEATED BETWEEN 269 AND 272 K (-4 AND -1 DEG C), AND THEN CAN BE CUT AND STONED BY USEFUL MACHINES. THE FRUIT ARE EFFICIENTLY HEATED BY A MICROWAVE TUNNEL-OVEN. CHEMICAL PEELING, SELECTING AND CANNING ARE BROUGHT ABOUT LIKE FOR THE FRESH FRUIT. THE TOTAL COST IS LOWER THAN IN CLASSICAL MODE OF OPERATION.
