Summary
The suitability of temperature loggers for the control of the temperature course during heating and cooling in the manufacture of meat products in medium sized plants was examined. The temperature loggers used were shown to be well suited to control and document temperature-time relations within the framework of internal control systems as required by the "Lebensmittelhygieneverordnung".
