Température de conservation des denrées alimentaires dans les meubles frigorifiques de vente utilisés dans l'artisanat.
Author(s) : MORELLI E., NOEL V., ROSSET P., et al.
Type of article: Article
Summary
The current study concerns the temperature of foodstuffs on sale in refrigerated display cabinets in bakeries, pork butcher's/delicatessens and cheese/dairy shops. Using results of bacterial-growth simulations, the authors propose a single criterion to estimate storage conditions i.e. foodstuffs remaining at temperatures below or equal to 7°C during all the service duration. 70% of studied time-temperature profiles do not comply with this criterion. Of the main factors responsible for temperature conditions, the authors made a distinction between factors related to refrigerated display cabinets and factors related to professional practices.
