IT IS MORE CONVENIENT TO STORE AND TRANSPORT FISH FILLETS IN BLOCK FORM, SO THE AUTHOR DEVISED A BQF PROCESS BY LOADING FILLETS IN CONTAINERS OR CARTONS AND PUTTING THEM UNDER PRESSURE BETWEEN THE PLATES OF A CONTACT FREEZER. IN USING THIS PROCESS, SPECIAL ATTENTION SHOULD BE GIVEN TO FISH FRESHNESS, DEBONING, PROPER FILLING AND FREEZING AND SANITARY CONTROL.
