THE TASK OF CREATING A SINGLE GENERALIZED MATHEMATICAL MODEL DESCRIBING THE HEAT-AND-MOISTURE EXCHANGE PROCESSES DURING THE REFRIGERATION OF DIFFERENT FOODSTUFFS ON THE PROCESSING LINE AND IN FAST-FREEZING UNITS IS DISCUSSED. POSITIVE RESULTS WERE ALREADY OBTAINED FOR SLAUGHTERHOUSE REFRIGERATION PLANTS UNDER OPERATING CONDITIONS.
